I have had a Creality Ender 3 V2 for about 3 and a half years now and it's a lot of fun. Even sold enough items off of it to pay for itself, a few times.

I don't have a printer, but I kind of keep looking for reasons to have one
Aside from the requests you get, what sort of things do you print out for yourself? I remember about 6 months ago there was a pretty sweet Humble Bundle containing a few hundred/thousand bucks worth of... fantasy based? Warhammer based?... models going for a song. Not just characters but diorama assets too, wall portions, building elements, roofs etc. Looked good to me but I'm not much of a fantasy fan. I might imagine it's possible to get some nice military models to print out & assemble?

Same here. I honestly have no clue what I would want to make 3D printed copies of even if someone gave me a printer as a gift.

I am currently printing out a floor mount flight stick gimbal. Will then print a stick grip and maybe a F-15 duplicate throttle. I've printed several just odd brackets etc for around the house. As for "for profit" work my wife has a knitting machine that I have made a few accessories for that I have sold on ebay.
In the way of models I have printed a small 20mm Oerlikon cannon and have plans for a much larger more detailed one. It was my father's weapon in WWII. Printed out a cool little F-5 that I need to paint. Numerous vases, small jewelry boxes etc for my wife. There is a huge Stargate Dadelus class starship I want to print and probably will if I get the K1 which is much faster than my E3V2.
I go a month or two without turning it on but it's good to have when the need or desire arises.

I see a number of radio hobbyists (Amateur radio, Meshtastic/LORA, etc.) printing enclosures for their projects. Some folks are 3D printing Night Vision enclosures for housing the analog tubes, etc.. 3D printing firearms receivers, etc. is also an active niche. Robot projects look like fun. Tons of stuff combining 3d printing with Raspberry Pis, Arduinos, etc.

I built a thermostatically controlled heated cabinet for glues etc in my unheated workshop and printed an enclosure for the control unit. Various battery holders, cases for screwdriver/bits too
Oh and I didn't like the shape of the know on the mini stick on my CH Pro Throttle so I printed a new knob with a concave top surface where my thumb sits.

Here is the Stargate Daedalus class starship I would like to print, just have to find the right silvery, greyish, metallic filament (and buy that fast K1 printer)

Something I also want to get into and have not in part because my current printer isn't the best for printing close tolerance items is 3D printed RC aircraft.
