Yeah, should be no problem. I think you could even have a couple of PCs running UDPSpeed and networked to your main sim PC, each displaying, say an MFD, on separate screens. Meanwhile you could have an instructor the other side of the world also running UDPSpeed, seeing a copy of your dials. Disclaimer: I haven't actually tried connecting with more than one UDPSpeed running at a time, but one instance certainly works.
